My Review

Kim Hoban opens the book with tips for getting started with vegetable cooking. She includes how to prep and cook vegetables as well as profiles of 30 different vegetables, some of which may be new to you.

The bulk of the book is recipes in which vegetables figure prominently, although not all recipes are vegetarian. I have multiple food sensitivities but still found a large number of recipes to try in this cookbook. I still have not yet tried all of them on my list.  

Two recipes have stood out so far as favorites – Shepherd’s Pie-Stuffed Sweet Potatoes and Stuffed Acorn Squash (I substituted ground turkey for the ground beef in this one).

If you are trying to add more veggies to your diet, I recommend How to Cook Vegetables by Kim Hoban.
